Wednesday my husband and I celebrated 9 years together as husband and wife.
Since it was a school night we celebrated at home with our two favorite people.
It seemed fitting we celebrate as a family in the home we have created with each other.
I decorated the table pretty and made a yummy veggie lasagna(recipe shared below) and even though we sat at home and ate our dinner just like any other night at home it was perfect.

Brooklyn helped me make the lasagna and then was found fast asleep when it was time to eat it

Farmer's Market Lasagna
1 zucchini, chopped
1 red sweet pepper, chopped
1/2 cup shredded carrot
3 cups baby spinach
1 jar(26 oz.) pasta sauce
6 regular lasagna noodles(uncooked)
1/2 carton (15 oz.) part-skim ricotta cheese
1 cup shredded mozzarella cheese
Preheat oven to 350 degrees.
~put the zucchini, pepper and carrots in a bowl and pour 2 Tbs. water. Cover and microwave on High for 2 mins., drain. Stir in spinach. Heat pasta sauce on High for 2 mins.
~Layer 1/2 cup sauce, 4 noodles, half the veggies, half the ricotta, 1 cup sauce and 1/3 cup mozzarella. Stack on 4 more noodles, remaining veggies and ricotta, 1/3 cup mozzarella, 4 noodles and rest of sauce.
~Cover with cheese and cover tightly with foil. Bake for 1 hour. Let stand 15 minutes before slicing.
