National Chocolate Cake Day


Sunday morning I read this post from my bloggy friend and knew I would just have to celebrate this wonderful holiday.  Did any of you even know there was a National Chocolate Cake Day?  I sure didn't, I knew about National Ice Cream day because we try to celebrate that day every year but I didn't know about Chocolate Cake Day.
I figured after I dropped Kayla off at school I would run to the store and grab a boring box of chocolate cake and some frosting in a tub but then I found a recipe that sounded amazing and I already had everything I needed to make it.  So after some laundry and cleaning up from the weekend Brooklyn and I got apron'ed up and ready to bake!



She is such an awesome little helper, she did most of the mixing and pouring in ingredients all I did was measure it and hand it over.





Let me just tell you that this cake and frosting is delicious and I'm pretty sure I will not be using a box chocolate cake mix EVER again!


I can't wait until after dinner tonight when we get to dig in!


Best Chocolate Cake Recipe

Chocolate Cake
2cups all-purpose flour
2cups sugar
¾cup cocoa
2teaspoons baking powder
1½teaspoons baking soda
1teaspoon salt
1teaspoon espresso powder
1cup milk
½cup vegetable oil
2eggs
2teaspoons vanilla extract
1cup boiling water

Chocolate Frosting
1½cups butter (3 sticks)
1cup cocoa
5cups confectioner’s sugar
½cup milk
2teaspoons vanilla extract
½teaspoon espresso powder

Directions
Preheat oven to 350º F. Prepare two 9-inch cake pans by spraying with baking spray or buttering and lightly flouring. For the cake: Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to a large bowl or the bowl of a stand mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well. Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter. Beat on high speed for about 1 minute to add air to the batter. Distribute cake batter evenly between the two prepared cake pans. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the center comes out clean. Remove from the oven and allow to cool for 10 minutes. Frost cake with Chocolate Frosting. For the Chocolate Frosting: Add cocoa to a large bowl or bowl of stand mixer. Whisk through to remove any lumps. Melt butter and pour into bowl with cocoa powder. Whisk together until well-combined. Add sugar and milk to cocoa mixture by adding 1 cup of sugar followed by about a tablespoon of milk. After each addition has been combined, turn mixer onto a high speed for about a minute. Repeat until all sugar and milk have been added. Add vanilla extract and espresso powder and combine well. If frosting appears too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it appears to wet and does not hold its form, add more confectioner’s sugar, a tablespoon at a time until it reaches the right consistency.

Oh how I want a piece of that Cake right now! You are killing me but in a good way.

My youngest loves to bake so I am going to try to get her to make this.

Where do you find espresso powder? I must look around.

I must say your lil one sure doesn't look like a bebe anymore (tears) she isn't even mine.Brooklyn sure is looking like a lil Girl these days.

Boy I could so do with a slice and a cuppa right about now!

Dang it - I missed it. Always a wasted day when you don't celebrate with chocolate cake ;) I'll have to pay attention to these kinds of days.
