Pasta Caprese

I made this pasta dish a few Sunday's ago for dinner and we all loved it!  Since a few of you asked for the recipe I figured I would post it for you all to enjoy.  It is super easy to make and perfect for the upcoming warmer months.  I served it with bread and dipping oils and we called it a day!


Pasta Caprese

12 oz. dried penne pasta or whatever shape you like
3 tablespoons olive oil
3 cloves garlic, minced 
pinch of oregano
2-3 beefsteak tomatoes chopped
 1 tablespoon lemon juice
salt and pepper
1/4 cup chopped fresh basil
8 oz mozzarella cheese cut up
sliced pepperoni
grated parmesan cheese

Cook pasta according to package and drain, return pasta to hot sauce pan.  Reserve some of the water for later use if needed.
In a large skilled heat oil, add garlic and oregano cook and stir for about a minute, stir in tomatoes, heat through.  Stir in lemon juice, salt and pepper.
Pour tomato mixture over cooked pasta in saucepan, heat thorough.  Stir in basil, if necessary add the reserved cooking water to reach desired consistancy.
Before serving add cut up mozzarella, sliced pepperoni and sprinkle with parmesan cheese.
